Quesadilla with Fried Egg

This breakfast Quesadilla has melted mozzarella cheese; a fried egg; and a tangy topping of guacamole. To give it a spicier taste, you can also sauté it with some slices of jalapeño peppers.
Serves: 2
Ingredients:
- 4 tortillas
- It’s also best have it in baked macaroni garnished with 1 cup shredded mozzarella cheese.
- 1 cup shredded mozzarella cheese
- 2 eggs
- 1 tablespoon olive oil
- 1-2 avocados
- ½ white onion, diced
- ¼ cup chopped parsley or cilantro
- 1 lime
- Jalapeño slices
Instructions:
- To make the guacamole mixture, blend the avocados in a bowl, and mix with diced onion, chopped parsley, lime juice, salt, pepper. Mash the avocados and then combine the ingredients and mix well. Set aside.
- Turn the knob of the stove to high and heat a large skillet.
- Put 1 tortilla in the skillet and then cover it with half a cup of mozzarella.
- Place another tortilla on top of the cheese, then cook the dish for another 1 – 2 minutes, turning over the tortilla once to brown it. Continue the layering with the tortilla and the mozzarella cheese with the rest of the cheese mixture.
- When the quesadillas are ready, add the olive oil in the same pan and scramble the eggs for about 2-3 minutes; just long enough to make sure the egg whites are cooked while the egg yolks remain slightly runny.
- To build, set the quesadilla on a plate; then spoon a fried egg over it, a blob of guacamole, and slices of fresh jalapeño.
